The Oyster mushroom (Pleurotus ostreatus) is the most foolproof of the cultivated mushrooms. Oyster mushrooms are very tasty and do not need to be parboiling. A very good oyster mushroom dish can be fried in egg and flour like schnitzel. The mushroom log yields a crop 4-5 years several times a season.
